Fagfelt:

Forskningsaktiviteten er hovedsakelig knyttet til råstoff- og produktkvalitet samt mekanismer som medfører produktendringer ved prosessering av fisk og sjømat. Mye av aktiviteten er knyttet til prosessering av laks og torskefisk og da spesielt salting, tørking og røyking men også varmebehandling og bruk av pakketeknologi. Det å bruke CO2 i ulike innovative kombinasjoner for å øke produktkvalitet og holdbarhet til lett prosesserte sjømatprodukter er sentralt i flere aktive prosjekter.

Karakterisering av kjemisk-, fysikalsk-kjemisk-, fysikalsk-, sensorisk- og mikrobiologisk kvalitet er viktige verktøy for å validere prosesseringsbetingelser. I faggruppa har vi god kompetanse på alle verktøyene der mitt ansvarsområde ligger innenfor kjemisk analyse (makro- og mikrokomponenter), biokjemiske analyse (enzymaktivitet og respirometri), bildeteknologi (imaging), spektroskopi (NIR og Raman) og tekstur. Vi er gode på analyse av karotenoider og har i tillegg blant annet metodikk for analyse av; pigmenter, aminosyrer, ATP-metabolitter, biogene aminer, vitaminer, proteindenaturering, harskningsparameterer, antioksidanter og antioksidantkapasitet). Sentral infrastruktur: UHPLC-DAD, HPLC-DAD-RID-ELSD, GC-FID, DSC, Oroboro, Raman spektrometer, Digyeye, Videometer, Texture analyzer mm.

Jørgen Lerfall er leder for faggruppa «Matvitenskap» ved IBT og leder for det strategiske satsningsområdet «Optimal utnyttelse av havets matressurser, Optimat» (2015-2023) ved NV-fakultetet.

 

Undervisning:

Undervisningen er knyttet til studieprogrammene «Bachelor i matteknologi», Bachelor i yrkesfaglærerutdanning» og «Master i mat og teknologi».

Tracing Listeria monocytogenes in the production chain of Atlantic salmon (TraceListeria) (2020-2022)

The objective of TraceListeria was to study the prevalence and to trace potential contamination routes of Listeria monocytogenes in the production chain of Atlantic salmon. The project was funded by FHF, grant id 901591 (2020-22)

Optimal utilisation of marine food resources/OPTiMAT (2016-2023)

OPTiMAT is a comprehensive project funded by NTNU dealing with marine food resources through the value chain from catching up to the consumer's table. (2016-2023).

Innovative Technological Solutions to Improve Shelf life of Lightly Processed Seafood (2015-2018)

The project aim was to develop and optimise new combinations of process- and packaging technology for lightly processed seafood products. The project was funded by the Research Council of Norway, Grant ID 248954 (2015-2018)
