Ute Barbara Gabriel har en doktorgrad i psykologi fra Technische Universität Berlin (1998) og en habilitasjon fra Universität Bern (2005). Hun har hatt forskerstillinger ved Universität Bonn (1993–1995) og ved Kriminologisches Forschungsinstitut Hannover (1995–1998), og var universitetslektor og senere førstelektor ved Universität Bern (1998–2006). Siden 2006 har hun vært professor ved Institutt for psykologi, NTNU, hvor hun også var nestleder (2010–2013) og instituttleder (2017–2021).
Hennes forskning fokuserer på sosialpsykologi samt psykologi og juss. Hun har vært gjesteredaktør for Swiss Journal of Psychology og assisterende redaktør for European Journal of Social Psychology. Hun har mottatt forskningsmidler fra blant annet Swiss National Foundation, EUs 7. rammeprogram (Marie Curie ITN) og Norges forskningsråd (FriPro).
