My PhD work is part of the OPTiMAT project, focusing on the optimized utilization of marine food resources. The scope of my project are little utilized marine resources, where I emphasise on European plaice and other flatfish for an increased utilization. This includes the chemical characterization of the fish and technological solutions for the utilization of the whole raw material, including by-products.

General research interests: food technology, side-stream utilization, by-product valorization and circularity, structure and functionality, nutrition and biochemistry

  • Lecturer (part-time) at NTNU: MATV3003 - Food Safety and Quality Management;  3rd year level course for Bachelor students in Food Science, Technology and Sustainability (winter semester 2022)
